I got an environmental education in the foods of the forest with writer and educator Sarah Courchesne. Along with a similar group of interested individuals we traipsed along the quad area of Northern Essex Community College where Sarah works as a teacher.
In a short amount of time she pointed out the importance of cattails, sumac berries and other plants and their usage.
